Egyptian Cold Shanks (Lamb) (Kawari’ bi-l-khalta) Recipe

Ingredients
6-8 lamb shanks
2 onions 3-5 mastic grains
3-5 cardamom seeds
lettuce
salt and pepper

Marinating Mixture:
1 onion, finely grated
1 carrot, grated
1/2 cup parsley, finely chopped
1 tablespoon oil
1 tablespoon lemon juice

Directions
Cook shanks. Bone and marinate boiled shanks for 2 hours in the above mixture. Brush off, and serve cold on a bed of lettuce leaves. Sprinkle with salt and pepper.
