Egyptian Dry Pastry Fingers Filled with Cheese (Asabi’ gullash bi-l-gibna) Recipe

4-1/2 ounces balkan cheese
4-1/2 ounces dry cottage cheese
2-3 hardboiled eggs
1 tablespoon chopped parsley
1-2 egg whites
1 pound gullash
1 tablespoon butter, melted

Directions
Grate the cheese. Mash eggs and add to cheese with parsley and pinch of pepper. Bind with egg whites.
Cut gullash into 4-inch squares and keep covered with cloth, either damp or dry. Take each square separately, place on smooth surface, and arrange cheese mixture thinly in a cigarette shape, about 1/2 inch from both ends. Fold sides toward center and roll very tightly.
Arrange neatly in greased oven tin, brush top with melted butter, and cook in preheated 350 F. oven until golden.
This paper-thin dough is sold in bakeries. It dries out quickly and should be kept covered, with either a damp or dry cloth.
